So I picked up a potion of fly and I am experimenting with flight, however I can't figure out how to rise up. Nor does fly appear to enable me to cross things like bodies of water - specifically, on the bone castle map I am behind the hut to the SW of the castle - from this spot you can see land on the far side of the pond but even after drinking the potion clicking on the open land still gives me a "no path to destination" error.
I don't know if this is a bug or if I am doing things incorrectly but if you are going to include things like flight it should be either spelled out how to use it or it needs to be a bit more intuitive.

I know there was a tutorial near the flying snake fight but, since the mouse wheel and tab got me where I wanted at the time and I did not have flight or levitate available, it went right over my head/was skipped through.

Short answer, it pretty much doesn't. I just wrote a bug about it.
You can change your height by rolling the mouse wheel if you toggle the "horizontal plane" button on the compass, but you have to have the mouse pointer in the right place to do it. Usually somewhere in the cyan squares sort of near your character should do it. While that lets you go up and down, and you *might* even be able to get to a floor/catwalk directly above or below you, your movement is actually severely hampered. I cannot fly across gaps. Even 1 square gaps that I could easily hop across. I've tried changing height to attempt to get across with no joy.

What does toggle the Horizontal plane mean?
It's useful for casting spells. Usually you are locked to the floor when placing a casting reticle or movement location. If you toggle the horizontal plane, you can cast Dancing Lights for instance up in the air. Maybe off the edge of a balcony, but at the height of the balcony. You can also use it to control your height if you are flying or levitating.
