Each Magic Missile hit forces a separate Constitution check for Concentration

While it was funny to watch the enemy caster fail, lose concentration on Fly and plummet to the ground, I'm fairly certain that Magic Missile is supposed to be one Constitution check no matter how many missiles hit the target, otherwise it would be too strong given it's "can't miss" property.

Well okay, then. I did look up the spell in the PHB, but it was unclear.

I'm not sure I agree with that "ruling", because that seems to make Magic Missile far too strong, because the more checks you make, the greater the chance you fail them. And not every class with Concentration mechanics has access to the Shield spell. And also that means that any unconscious PC can instantly fail 3 death saves and be dead from the guaranteed-hit magic missile. I'm not sure he's considered all the implications.

But if he says so, I guess that's the rule.

A lot of players of 5e disagree with a lot of Crawford's rulings, especially since he sometimes contradicts himself, but RAW, each separate source of damage forces a Concentration check. But he is the Lead Rule Designer for 5e.

His ruling is what the devs here have gone with.

Since Magic Missile is one spell hitting with multiple darts, it's no different than an archer shooting the same target 4 times on their attacks, or a Warlock using all their bolts on Eldritch Blast on one target, or a Scorching Ray hitting someone three times.

And yes, smart enemies would kill a downed opponent, because that's one less threat to them.

As an aside, sometimes he points out some incredible things that people don't realize. Paladin Aura to saves for instance, counts toward Death Saving Throws for a downed party member as long as the Paladin is within range. Monks ability to become proficient in all saves, also counts toward those as well.

Keep in mind that every mage probably has the level 1 Shield spell, that protects from magic missile. It can even be cast as Reaction (and some enemies in the game do that right now). So while magic missile is (probably on purpose) good to interrupt spellcasters, they can easily protect themselves by a level 1 spell. I think that's well balanced.
