How much of Baldur's Gate 3 is playable in 2023?

BG3 Early Access will NOT change at all in 2023.  Larian has stated that, except for bug fixes of course, Early Access will now (after patch 9 from Dec. 2022) remain the same as they focus on the final game release planned for August 2023. 

You can play Act 1 (though they may be keeping some small bits of Act 1 secret until release). 

If you just skim quickly the content, it is about 20-30 hours, but if you take your time to explore everything, many play it for 50 hours or more.  For those who want to try different classes and want to test out playing Evil then Good, etc., Early Access can be worth it (cost around 60 USD).

That is an odd phrasing on your part (still), considering they just (Dec. 2022) unlocked level 5, with numerous spells for that level, which makes characters much more powerful (2 attacks, fireball, etc.).  The leveling is fast enough for only Act 1.

Yes and no. Yes, level 5 for the end of Act 1 can be acceptable for a RPG (Except for Neverwinter Night 2 because the first Act is very long). And No, because I tried to play with a mod that removes the level limitation in patch 8, and the natural level increase quickly reaches 6/7 even before the Underdark.
